Chicken & Avocado

It would be hard to describe this post as a recipe. My chicken and avocado dish is more of a meal idea if you are following a bulletproof, keto or paleo style diet. The simple lunch packs well in a container to take with you to work or play. The salt and lime will also keep the avocado from spoiling.

The ingredients below should make 2 portions.

Ingredients

1 teaspoon of coconut oil

3 ripe avocado’s, mashed

juice of 1 lime

3 free range, organic chicken breasts

sea salt to taste

chili flakes to taste

1 handful of fresh coriander, chopped

Method

Put a cast iron griddle pan on a medium heat. Add a little coconut oil to grease the pan then add the chicken breasts. I like to cut the chicken breasts in half before adding them to the pan so that they are thinner and cook quicker.

While the chicken is frying mash the avocado with lime, sea salt and a sprinkle of chili flakes.

Once the chicken is ready serve with some freshly chopped coriander and lime wedges .
