Handmade Burgers with Avocado & Beetroot Salad

A good burger is one of my guilty pleasures. After a hard Taiji training session with my teacher in Oxford I often find myself being pulled to Five Guys as my treat. When I’m thinking about my weekly food plan to stay lean and strong, this is my more everyday alternative. It is really just the basics of eating well. Good quality meat with organic veg.

This recipe should make 8 burger patties. Personally, I like to make the burgers quite thin, around 1 cm and cook for just a few minutes on each side so they are still a little pink in the middle.

This recipe should serve 4 portions with two burger patties per portion.

Ingredients

Extra virgin, organic coconut oil for frying

750g of good quality beef mince

1 large free range egg

Sea salt and black pepper to taste

Salad

2 fresh beetroots, grated

2 carrots, grated,

2 handfuls of spinach leaves

1 avocado, chopped

1 handful of cashew nuts,

drizzle of extra virgin olive oil

Method

Put the mince into a large mixing bowl, add the whole egg with salt and pepper. Using both hands work and knead the mince into the egg. then make the burger patties.

Heat a grill pan with a little coconut oil and add the burger patties. Fry the burger to taste while preparing the salad ingredients. Mix the salad in a large bowl and serve with the burgers.
