Vegetable Tagine

A full flavored tagine to fill you full of vegetable goodness. This recipe will serve 4 and take around an hour and a half to prepare and cook. Have a go and let me know your thoughts in the comments section below.   


Ingredients For the chermoula paste  

2 red onions  

4 cloves of garlic

1 inch piece of ginger

Juice of 2 lemons

100ml of extra virgin olive oil

1 tablespoon of maple syrup

1 tablespoon of cumin

1 tablespoon of paprika

1 tablespoon of turmeric

1 teaspoon of hot chili paste

1 large handful of chopped coriander  

For the Tagine

1 tablespoon of coconut oil

3 carrots, chopped

3 parsnips, chopped

2 large sweet potatoes, chopped

3 leeks, chopped

12 dates

Large handful of fresh mint leaves


Method

Add all of the chermoula ingredients to a blender and whizz up.

Pour from the blender into a frying pan and cook for a few mins until sizzling.

Add the chopped veg to the pan and cook together for 10 mins.

Pour the contents of the pan into an oven proof dish with 400ml of water. Cover the dish and cook for 45 mins. After this time remove form the over stir, add the dates and mint and cook for another 45 mins.

Serve with cauliflower rice.
