Avocado & Nut Butter on Sourdough Toast

At the moment this is hands down my favorite breakfast. I first saw it on the menu at Le Petit Prince in Westbourne a few years back. Since then its started popping up on most good cafe breakfast menus.

If you are following a vegan/plant based diet it can be tricky to get enough calories and fat at first. Avocado and nut butter is packed full of calories and healthy fat! 

Due to the sourdoughs fermentation process it can be less bloating and iritating on the gut for most people. Best way to find it is give it a try and see how it makes you feel.

This suggestion serves two and takes only a few minutes to make.


Ingredients

1 large ripe avocado

Pinch of salt

Juice of half a lime

1 table spoon of extra virgin olive oil

Chili flakes to taste

Good dollop of your favorite nut butter, peanut, almond, cashew  

2 slices of sourdough bread, toasted.


Method


 Cut the avocado in half and peel. Add to a bowl with the salt, lime juice and olive oil. Mash!

 

Once the sourdough is toasted spread the nut butter followed by the avocado. Sprinkle with chili flakes for an extra kick.
