Brownie Balls

We all need something sweet as the occasional pick-me-up and there is no reasons why it can’t be as healthy as it is delicious. This recipe will make 14 medium sized brownie balls. The challenge is not eating them at once! Luckily they will keep for up to 10 days in a sealed container in the fridge. Remember to share them too!

Ingredients

350g Pitted Medjool dates

100g Porridge Oats

60g Almonds

60g Walnuts

90g Unsweetened cacao powder

1 teaspoon of vanilla extract

Method

It couldn’t be more simple to make these brownie balls. Start by putting the pitted dates in to a food processor and blend until smooth. If the dates are quite dry you may need to add a little water.

remove the date mix and set aside before adding the oats and nuts and blitz until they become fine crumbs.

Add the date mixture back in to the food processor with the nuts, vanilla extract and cacao powder. Blend again to mix it all up. You may need to add a little water to help the mixture become a dough that holds together when you squeeze it with your hands.

Mold the brownie mixture into 14-15 balls and set on some tin foil to avoid sticking and place in the fridge for a couple of hours so they can set.
